Sauteed Eggplant with Minced Pork 肉菘渔香茄子

  • Portion: Good for 2-3 person

  • Preparation Time: Approx. 6 mins

  • Ingredients:
    1. Eggplant
    2. Minced Pork
    3. Chopped Garlic, Chopped Shallot, Diced Mushroom & Cut Red Chili
    4. Chef’s Special Sauce
    5. Cornstarch
    6. Spring Onion

  • Method of Preparation: 
    STEP 1:
    Heat up frying pan and add in 2 tablespoon of cooking oil. Add in #1, and pan-fry using low heat till golden brown for approximately 5 minutes.
    将平底锅烧开, 加入2汤匙菜油把#1(茄子)以小火煎至金黄色约5分钟。

    STEP 2:
    Add in #2 and continue to fry till golden brown for approximately 1 minute. 
    加入#2(肉碎)继续煎至金黄色约1分钟。

    STEP 3:
    Add in #3 and stir fry till fragrant.
    加入#3(葱肉头,蒜头肉,花菇和红辣椒)翻炒爆香均匀。

    STEP 4:
    Pour in #4 and 120ml of water. Simmer using medium heat for approximately 4-5 minutes, till eggplant is soft.
    加入特制的#4(渔香酱)与120克清水,转中火焖煮至茄子软滑约4-5分钟。

    STEP 5:
    Mix 20ml of water with #5. Stir in #5 to thicken sauce.
    将#5(生粉)与20克的清水搅拌均匀加入,转中火翻炒均匀至浓稠的酱汁包酿的茄子,即可盛入碗盘。

    STEP 6:
    Remove from pan, add in #6 and serve.
    最后,加入#6(青葱)作以点涰即可上桌享用。
